This is a favorite soup for those watching their sodium and fat intake. We use a blend of maccaroni, brown rice, split peas, lentils, barley and onion to provide a hunger satisfying richness with or without meat.
Vegetable Soup Mix
1 pkg. Vegetable Soup Mix
8 c. water
1 lb. hamburger, browned and drained
3 c. diced vegetables (carrots, potatoes, celery, etc.)
15 oz. tomato sauce
2 tsp. salt
- Boil water, contents of soup mix, and salt in a large kettle.
- Cover and simmer of 60 minutes..
- Add tomato sauce, vegetables, and hamburger.
- Simmer for 25 minutes or until vegetables are tender.
- Serve with sour cream.
Mix Ingredients: Macaroni, brown rice, split peas, lentils, barley, dried onions. No MSG or autolyzed yeast extract.
Substitute hamburger with Italian sausage, and tomato sauce with spicy Italian tomato sauce.
